Baked Oatmeal

This is a wonderful  Bed and Breakfast type of recipe.  I was browsing around one of my 'go to' sites, Our Best Bites  and came across it.  This would be perfect to warm up the kids after a chilly morning of playing in the snow.  I might try this for when we have out of town guests and need something easy enough to make after a late night of too much fun.  It turns out like very hearty homemade oatmeal, but with that extra texture from baking.

You will need (makes 8 servings)
3 cups oats (not quick-cooking)
3/4 cup brown sugar
1 tsp salt
2 tsp cinnamon
2 tsp baking powder
3/4 cup raisins, dried cranberries, dried cherries, or other dried fruit
1 cup milk
1/2 cup butter, melted
2 tsp vanilla
2 eggs

-Preheat oven to 350
-In a large bowl, combine dry ingredients

-In a small bowl, whisk together wet ingredients
-Combine wet and dry ingredients, mix well
-Pour mixture into a greased casserole, deep pie plate, or an 8x8 dish 
-Bake for 40 minutes or until the top is golden brown
-Serve immediately with a splash warm milk (if milk is cold it will cool down everything too much)

This smells so amazing coming out of the oven.  I had a hard time snapping shots due to  my toddler pulling on my shirt while using some choice toddler words towards me.   I then promptly scooped out some oatmeal, scooped up the toddler and we snuggled on the couch with a bowlful of this belly filling stuff.

Happy Presidents' Day

Here are some of the things I don't like about Presidents' day:

Car commercials - Why the heck are they so loud?!!  What about our Founding Fathers makes us need to buy a new car?

Going to the bank -shoot it's a holiday!

Going to the Department of Motor Vehicles -shoot it's a holiday!

Driving past the Post Office because it's a holiday. least Starbucks is open.

Here are some things I do like:

Reminding myself about all of the footwork done before me, so I may have the privilage to live in this beautiful country.

Wouldn't this be a great learning tool for kids.  The illustrations are perfect and should stick into their little kid brains.

Dream Forts

Recently I made a fort for my little guy.  It was quite a pitiful little fort, made of couch cushions and my husband's old college comforter.  Not nearly as enchanting as I envisioned, but to my 18 month old it was the perfect little romping space.

Give With Heart

 The Hubbs and I have both been in the food industry for a while.  We have started to notice all of the Crayons being tossed out at our restaurants.  Did you know that in most states restaurants are not allowed to reuse their Crayons due to food safety practices?  While I appreciate them avoiding the spread of germs, it did make me wonder - How many Crayons are wasted that are perfectly fine for the general public?

Yep, that's a laundry basket full.  This is only 3 months worth from my husband's restaurant!  

We found a local Women's and Children's Shelter to happily take our batch.  This is such an easy and free way to pass along something great - the tools for imagination! 

So, if you know of someone in the restaurant business, or just want an easy way to get involved in charity, set them up with a Crayon bucket, bag or basket.  Have them toss the Crayons in there instead of the trash and pick them up as needed.
