Healthy Baby Recipe: Mushroom Pasta Sauce


     I'm trying out a variety of flavors and textures on the Babe.  I really don't want him to end up to be a picky eater, like myself  (oh the shame).  What better way to start off than with my arch nemesis -mushrooms!  Dum, Dum, Dummm.......
Mushroom Pasta Sauce
(8 months +)
adapted from Amanda Grant's 'Baby & Toddler Healthy Eating Plan'

You will need:

1 Tbls Olive Oil
3 Scallions (finely chopped)
10 oz. Mushrooms (sliced)

1 Tbls Parsley (finely chopped)
Fresh Ground Pepper
6 Tbls No Salt Vegetable Stock
3 Tbls Cream Cheese
Pasta or Rice (cooked)


Heat the Oil in Large Skillet.  Add Scallions and Saute' Until Translucent (about 5 min.)


Add Mushrooms and Fry Until Golden Brown and Begining to Loose Their Liquid.  Add Parsley & Pepper and Stir.


Stir in Stock and cook over gentle heat until soft (about 5 min)


Stir in Cream Cheese

Mmmm... smells great!

Transfer to Food processer (blender, hand mixer) and Blend into Desired Consistency (I left mine with a little texture). Freeze in Ice Cube tray.  Makes About 12 Cubes.


Serve Over Pasta or Rice
(Um kinda looks like cat food, but I'm sure it's good right?)
